What is Nukadoko? Nukadoko is a living fermentation bed made from rice bran, salt, and beneficial bacteria that transforms fresh vegetables into probiotic-rich, flavorful pickles. This centuries-old Japanese tradition creates vegetables with a distinctive tangy, umami-rich taste and crisp texture.

How it transforms your vegetables: Simply bury fresh vegetables in this velvety, aromatic rice bran mixture and let the magic happen. Within hours to days, your vegetables develop that signature tangy-salty flavor with a satisfying crunch that's impossible to achieve any other way. The living culture works continuously, creating complex flavors while preserving nutrients and adding beneficial probiotics to your diet.

What you get: A complete, ready-to-use nukadoko bed that can be used repeatedly for months with proper care. Each batch of vegetables you pickle adds to the depth and complexity of flavors, making your nukadoko even better over time.

Start your journey into traditional Japanese fermentation today - no experience necessary, just add vegetables and enjoy the incredible flavors of homemade tsukemono.
